1.面粉+酵母+温水+糖搅拌成面絮,再揉成光滑的面团,盖上保鲜膜,放温暖处发酵至两倍大。

2.牛肉剁成末。

8.加入炒好的牛肉末中(包之前再搅拌均匀,不要拌早了,以免素菜遇到盐会杀出水分,不好包)。

9.发酵好的面团(一个半小时左右)。

10.中间戳一个洞不回缩,面团就是发酵好了。

11.取出面团,排气,再次揉光滑。

17.放入锅中(锅底抹油),不开火,盖上锅盖,再次醒发20分钟。

18.时间结束后,开中火煎3分钟后,加适量的水(水加到包子的2/3处),大火煮开,烧干水分,待听到锅中嗞嗞响的时候(12分钟左右)。

19.煎包子时,准备好黑芝麻和葱花。

20.面粉水(面粉和水的比例是1:10)。

21.待听到锅中嗞嗞想的时候,快速的打开锅盖,倒入调好的面粉水好,撒上黑芝麻,再焖2分钟至水干,关火后再虚焖3-5分钟,打开锅盖撒上葱花即可出锅。
